We source directly from small producers in Emilia-Romagna, Piedmont, and Tuscany, building relationships that mean every dish carries a provenance our chefs know by name. Seasonal. Honest. Unforgettable.

Born in Bologna and trained under Michelin-starred kitchens across Florence and Milan, Chef Marco returned to his roots after two decades of refining a philosophy that simplicity — done with obsession — is the highest form of cooking. His menus change with the seasons, never the philosophy.
